Celebrate Norwegian Summer with Recipe from Elisabeth

It is the beginning of summer in Norway, with longer days and beautiful weather. The bear blooms in the woods. People enjoy hiking with family and friends, since the days are suddenly infinitely long. The midnight sun shows the way. The relaxed summer days enable excursions to the countryside and relaxing fishing trips.
It is a joy to visit local Norwegian markets in the summer. The vegetable stands are full of the season's bountiful harvest. Fishmongers sell the day's fresh fish. Eating is a pleasure and it takes very few ingredients to make a delicious meal. The dessert can be as simple as a bowl of strawberries from early summer, full and red.

Summer salad with fresh potatoes for 4 people
New potatoes are a taste of summer in Norway. The season only lasts two months, from mid-June to mid-August. This recipe for fresh potatoes/summer salad is a must at every barbecue. While traditionally many people use mayonnaise, this version is a lighter and healthier variant.
- 1.5 kilos of potatoes
- 75 ml white wine vinegar
- 150 ml extra virgin olive oil
- 2 tablespoons whole grain mustard
- A pinch of salt
- 3 dill pickles, chopped
- 2 handfuls of dill, chopped
1. Cook the potatoes until they are soft, about 20 minutes. Let them drain and cool.
2. Whisk together white wine vinegar, olive oil, mustard and salt in a small bowl.
3. Cut the potatoes into 5 centimeter pieces and put them in a bowl.
4. Drizzle over vinaigrette.
5. Add cucumber and dill. Stir well.
6. Put in the fridge to cool for at least two hours.
Refreshing cucumber salad for 4 people
This simple salad is made with pickled cucumbers. The cucumbers contain a lot of water and help the body to rehydrate. This is particularly beneficial during the summer months.
Ingredients:
- 1 medium-sized English cucumber, sliced into very thin slices with the skin on each side.
- 60 ml white wine vinegar
- 60 ml water
- 1 teaspoon Kosher salt
- 4 tablespoons flat parsley, chopped
1. Mix vinegar, water, salt and sweetener in a saucepan over medium heat to make a vinegar mixture.
2. Let it cool down
3. Put the cucumbers in a shallow bowl.
4. Cover with liquid.
5. Refrigerate, covered, for 2 hours.
6. When serving, sprinkle with parsley.
7. Store leftovers in the fridge for up to three days.
Skewers with vegetables and Norwegian salmon for 4 people
Salmon is always a healthy source of protein and omega 3. Norwegian salmon is among the finest in the world.
Ingredients:
- 8 small wooden skewers that are soaked in water before use.
- 400 grams of Norwegian salmon in thick slices
- 16 small tomatoes
- 1 small zucchini, cut into thick rounds
- 1 red pepper cut into cubes
- Olive oil
- Salt and pepper to taste
1. Thread the ingredients onto the skewer.
2. Drizzle with a little olive oil.
3. Sprinkle with salt and pepper.
4. Place on a hot grill and cook until the salmon is cooked through.
